2 cups sliced onions
2 Tablespoons butter
Salt and pepper to taste
2 unbaked pie shells
1 beaten egg
1/2 cup of milk
2 teaspoons chopped parsley
4 green onions chopped (including tops)
1 cup of shredded cheese (I use cheddar)
1/4 teaspoon paprika
Sauté onions in butter then add paprika. Add salt and pepper to taste. Sprinkle
alternate layers of cheese and onions in pie crust beginning and ending with
cheese. Beat egg with milk and parsley then pour over the filling. Place second
crust on that and slash a couple places for steam to escape.
Bake at 375°F about 40 minutes or until crust is golden
brown. Cool and enjoy!
