Arugula & Lemon Salad

 

 

¼ cup extra-virgin olive oil

¼ cup lemon juice, fresh

2 teaspoons lemon zest

½ teaspoon red pepper, dried, crushed

6 cups arugula, coarsely torn

Salt and pepper, to taste

 

 

Whisk together first four ingredients. Pour over washed arugula and mix. Salt and pepper to taste.

 

 

Goes excellent with just about any seafood!
