Baked Mustard/Mayo Fish

Use the coating for this fish with poultry, as well. Adjust cooking times, of course.

 

Serves 4

 

4 fish fillets (firm fish preferred)

¼ cup mustard

1 cup mayonnaise

½ large bag, plain pork skins

Fresh ground pepper, to taste

 

 

Mix mayonnaise and mustard together to make a sauce. Cover fillets with sauce.

Smash pork skins with rolling pin. Coat each side of fillet with smashed up pork skins.

Put fillets in oven at 350 degrees F and bake for approximately 15-20 minutes.

Season to taste with pepper and enjoy! Serve with rice or over a fresh green salad.
