Baked Rockfish [That’s Striped Bass to the Yanks]

This thick, flaky white meat is delicious and very versatile…

 

Serves 2 - 3

 

2 small fillets of rockfish

Salt and pepper

All purpose flour

2 bacon strips, cut in half

1 medium onion, sliced

3/4 cup water

 

 

Score fish on both sides making gashes about 2-3 inches apart. Wash fish under cold running water. Pat dry with paper towels. Generously salt and pepper fish on both sides, then sprinkle both sides with flour.

Lay 2 bacon strip halves on bottom of baking dish. Sprinkle bacon lightly with flour.

Place fillets on top of bacon strips and place remaining bacon on top of fish.

Put onion slices around and on top of fish. Pour water in baking dish, cover and bake at 350 degrees F for 40-45 minutes.

Remove cover, stir juices and bake uncovered until gravy thickens.

Remove fillets to serving platter and coat liberally with gravy.
