Baked Walleyed Pike

 

Serves 4

 

3 pounds walleye, scaled and dressed

2 tablespoons shallots, minced

2 tablespoons butter, softened

5 strips bacon

1 cup sour cream

¼ teaspoon thyme

½ cup grated Parmesan cheese

½ cup bread crumbs

2 tablespoons lemon juice

Salt & Pepper

 

Salt and pepper fish. Mix the shallots with butter and spread it inside and outside fish.

 

Lay the bacon strips on the bottom of a shallow baking dish and lay in the fish.

 

Mix the sour cream, thyme, grated cheese, bread crumbs and lemon juice in a small bowl. Spread mixture over fish.

 

Bake at 325° F for about 30 minutes.

 

Serve with potatoes and a green salad.
