Barbecued Rockfish

 

Serves 4-6

 

3-4 pounds Rockfish [Striped Bass]

½ teaspoon salt

Pepper to taste

4 tablespoons onions, chopped

1 tablespoon oil

2 tablespoons vinegar

2 tablespoons brown sugar

3 tablespoons Worcestershire sauce

1 cup tomato catsup

1 tablespoon butter, melted

1/3 cup lemon juice

½ teaspoon prepared mustard

 

Preheat oven to 425° F.

 

Place fish in greased shallow pan; sprinkle with salt and pepper.

 

Lightly brown onions in oil, then add remaining ingredients. Simmer 5 minutes then pour over fish.

 

Bake fish 35-40 minutes. Baste occasionally with sauce.
