Basic Corn Bread

 

1 ¼ cups yellow cornmeal

¾ cup flour

¼ cup granulated sugar

4 teaspoons baking powder

½ teaspoon salt

½ cup vegetable oil

2 eggs, lightly beaten

1 ¼ cups milk

 

Mix dry ingredients. Add remaining ingredients and stir just until mixed well (will probably still be lumpy). Pour into a greased cast iron skillet and bake at 400 degrees F for 25 minutes.
