Basic Fennel Dressing
Frugal Gourmet
½ cup olive oil
½ cup peanut oil
½ cup red wine vinegar
½ cup white wine vinegar
1 teaspoon sugar
1 tablespoon dry mustard
1 teaspoon fennel seed, ground
2 tablespoons lemon juice
1/8 cup dried parsley
Salt & pepper, to taste
Blend the oils and vinegars. Add sugar, mustard, and fennel. Blend well. Add lemon juice, parsley, salt and pepper. Mix well.
