Big Jim's Pecan-Parm Tilapia

Serves: 4

 

1/2 cup chopped pecans, toasted

1/3 cup grated parmesan Cheese

1/4 cup chopped fresh parsley

3 tablespoons lemon juice, divided

1 tablespoon olive oil

4 tilapia fillets (1 lb.)

1 Tbsp Big Jim's Favorite Seafood Seasoning (recipe below) 

1 can (14 ounce) fat-free reduced-sodium chicken broth

 

Preheat oven to 375ºF.

Combine pecans, cheese, parsley, 2 tablespoons of the lemon juice, Big Jim's seasoning, broth, and the oil. Place fish in single layer in shallow baking dish; pour pecan mixture over the fish. Drizzle with remaining lemon juice.

Bake 10 to 12 minutes or until fish flakes easily with fork.

Big Jim's Favorite Seafood Seasoning

Ingredients:
4 teaspoons Old Bay Seafood Seasoning
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
2 teaspoons kosher salt

Directions:
Mix ingredients together and store in an air tight container if not using immediately.
