Black-Eyed Pea Salad

 

Serves 4-6

 

 

1 (15 oz.) can black-eyed peas, rinsed and drained

1 (15 oz.) can whole kernel corn, rinsed and drained

½ cup green pepper, chopped

1 cup onion, chopped

 

Marinade:

 

½ cup oil

½ cup sugar

½ cup vinegar

 

Mix black-eyed peas, corn, green pepper and onion in bowl.

 

Combine oil, sugar, and vinegar in a separate bowl and mix. Pour marinade over vegetables and mix well. Chill 4 – 8 hours in refrigerator before serving.
