Broccoli/Bacon Salad

Gail Hudson, Richmond, VA

 

Serves 4 - 6

 

 

2 1/2 cups fresh broccoli in small pieces

 

5 to 6 bacon strips crumbled

 

1 cup of raisins  (Can use half golden and half dark)

 

1/2 cup diced red onion

 

1/2 to 3/4 cup of chopped nuts (almonds or pecans)

 

 

 

 Dressing:

 

2  tablespoons vinegar

 

1 cup mayonnaise

 

1/2 cup sugar

 

 

Mix all salad ingredients together.

 

Blend mayonnaise and sugar (or sugar substitute) together. Mix vinegar in slowly.

 

Prepare salad several hours before serving or refrigerate over night. Drizzle dressing over salad and serve.
