Chewy Oatmeal Peanut Butter Cookies

1/2 cup butter, softened
2 teaspoons vanilla
1 teaspoon soda
1/2 cup peanut butter, at room temperature
2 eggs
2 teaspoons molasses
2 1/2 cups quick oats
3/4 cup honey

Preheat oven to 325° F. Butter 2 baking sheets.

In a large bowl, cream butter and peanut butter until well blended. Mix in honey, vanilla and molasses. Beat in eggs one at a time. Stir in baking soda and then oats. Drop by rounded teaspoonful onto prepared baking sheet 3 inches apart. Bake 12 minutes or until lightly browned.

Cool cookies on baking sheets until easily removed, about 3 minutes. Complete cooling on wire racks.

Variations: raisins or nuts may be added.
