Cornish Game Hens

 

Makes 4 Servings

 

2 Rock Cornish game hens

3 tablespoons unsalted butter

½ teaspoon salt

½ teaspoon pepper

1 medium onion, quartered

1 lemon, quartered

Dash of paprika [optional]

 

Preheat oven to 350 degrees.

 

Rinse hens thoroughly and pat dry. Rub each with unsalted butter. Sprinkle inside and out with salt, pepper and paprika (if desired). Insert 1 onion quarter and 1 lemon quarter on inside of each hen.

 

Spray roasting rack with non-stick spray. Place hens on rack over shallow roasting pan.

 

Bake for 1 hour to 1 hour 15 minutes, breast side up. Temperature should be minimum 1800 F. Cut into thigh. Juice should not be pink. Legs and wings rotate easily.

 

Let stand for 5-10 minutes before cutting. Cut each hen in half and serve hot.
