Country Vegetable Oven Omelet

Serves: 2

3 eggs
1/4
teaspoon salt
Dash
fresh ground pepper
1/4 cup shredded
Monterey Jack Cheese
1/8
cup ea. of as many different fresh veggies as you like
1
/4 cup fat-free half n half


Cut veggies into bit size pieces (or slightly larger) Spray baking pan well. Mix and spread veggies in pan. Top with cheese. Pour egg mixture (eggs, milk, salt, pepper) over veggies. Bake at 350° F for about 45 minutes. Serve hot.
