Crème Fraiche

Makes: 2 Cups
2 cups heavy cream
1/8 cup buttermilk
Stir together heavy cream and buttermilk over medium heat in a saucepan, to roughly 98.5° F.
Remove and place the mixture in a bowl. Cover with towel. Refrigerate overnight to thicken.
Use or store in refrigerator for up to a week.
Can enhance the flavor of soup, fish or fruit.
