Cranberry Almond Spinach Salad

 

Serves 8

 

1 tablespoon butter

¾ cup slivered almonds

1 pound spinach

1 cup Craisins [Ocean Spray]

4 ounces feta cheese, crumbled

2 tablespoons sesame seeds, toasted

1 tablespoon poppy seeds

½ cup sugar

2 teaspoons minced onion

¼ teaspoon paprika

½ cup cider vinegar

½ cup vegetable oil

 

 

Melt butter in a small skillet over medium heat. Add almonds and lightly toast. Cool and set aside.

Tear spinach into bite-sized pieces and place in salad bowl.

Add toasted almonds, Craisins and feta cheese.

Make dressing; whisk together sesame seeds, poppy seeds, sugar, onion, paprika, vinegar and vegetable oil.

Add dressing to spinach, to taste; toss gently and serve.
