CUCUMBER-ONION
SALAD
Serves 4
2 cucumbers, washed, peeled, thinly sliced
3 tablespoons cider vinegar
1 tablespoon sugar
Salt and freshly ground black pepper
1 small red onion, sliced and separated into rings
3 tablespoons finely chopped fresh dill
Place vinegar, sugar, salt and pepper in a bowl and whisk until sugar is
dissolved. Add the cucumber, onion and dill, and toss well. The salad can be
served at once, but it will improve in flavor if you let the ingredients
marinate for a while.
