Downhome Seafood Boil

Doug Wendling, Corolla, NC

 

Serves 6-8

 

½ cup crab boil or Old Bay® Seasoning

2 tablespoons sea salt

4 quarts water [or a pot full]

1 [12 Oz.] can of beer (Optional)

8 medium red potatoes, quartered

2 large sweet onions, quartered

2 pounds smoked sausage or bratwurst, cut in 2-inch lengths

8 ears fresh corn, halved

2 pounds large shrimp, in shells

2 dozen clams, cleaned and debearded [Make sure clams are alive and closed]

2 pounds snow crab legs and pieces

 

In a large pot, bring seasoning, salt, water and beer to a boil. Add potatoes and onions; cook over high heat for 8 minutes.

 

Add smoked sausage to potatoes and onions; continue cooking for 5 minutes. Add corn to pot; continue to boil for 7-8 minutes.

 

Add shrimp, clams, and crab; cook for an additional 4 – 6 minutes [or until clams have opened]

 

Drain cooking liquid. Pour contents of pot into several bowls, or mound on a paper-covered picnic table.

 

Serve with cocktail sauce and melted butter. Provide lots of napkins and bowls for guest to discard shells.
