Fine Fried Flounder

 

Serves 4

 

2 pounds flounder fillets, cut into 4 oz. portions

Peanut oil, for deep frying

1 ½ cups yellow cornmeal

Dash cayenne pepper

Salt and pepper, to taste

 

Rinse fillets with cold water; pat dry.

Heat oil to 375 degrees F.

Combine cornmeal, pepper, salt and pepper in plastic bag.

 

Dip each fillet in cold water, drain briefly and insert in plastic bag. Shake fillet to coat. Set aside for 10-12 minutes. Reinsert in plastic bag and shake to cover again.

 

Fry until golden brown and cooked through, generally 4-6 minutes depending on thickness. Remove from fryer, drain briefly and place on rack covered with paper towels.

 

Serve immediately.
