GINGER COOKIES

3 sticks melted butter
1/2 cup molasses
2 cups sugar
2 eggs
4 cups flour
4 teaspoons baking soda
2 teaspoons cinnamon
1 1/2 teaspoons ginger
1 teaspoon cloves
1 cup extra sugar to roll cookies in

Preheat oven to 350° F.

Combine melted butter, molasses, 2 cups of sugar, and eggs; mix well. 

Sift together flour, baking soda, cinnamon, ginger, and cloves. Add to the butter mixture and mix completely into a dough.  [Don't worry about how it looks like, it's OK.]

Refrigerate for about 4 hours.  Remove from fridge and then pinch off small pieces and form into balls.  Roll each ball into sugar to coat.  Spray cookie sheet with Pam and bake 8 minutes for a soft chewy cookie and 10 minutes for a harder crisper cookie when they have cooled.
