Grandma’s Yummy Yam Bake

Serves 4

 

4 medium (1 ½ pounds) yams or sweet potatoes

½ cup packed brown sugar

¼ cup (4 tablespoons) no-salt butter or low-fat cooking spread

3 tablespoons water

½ teaspoon salt

1 cup mini-marshmallows

 

Pre-heat oven to 325o F.

 

Scrub, but don’t peel yams/sweet potatoes. Pierce each to allow steam to escape.

Microwave, uncovered, for 8 – 10 minutes or until tender.

Slip off skins (discard), cut into chunks. Add next 4 ingredients.

Beat or mash to a smooth consistency.

 

Put in baking dish. Cover and bake at 325o F for roughly ½ hour.

Remove from oven. Fold in mini-marshmallows.

 

Serve warm.

 

Note: Goes well with almost any pork or poultry dish.
