Mary Evans, Cooking Pleasures

Serves 5

2 teaspoons coarsely chopped garlic

2 teaspoons herbes de Provence

½ teaspoon dried rosemary

1 teaspoon sea salt

1 ½ pound beef sirloin, 1-inch thick

Heat grill. On cutting board, chop together garlic, herbes de Provence and rosemary until finely minced; mix in salt. Sprinkle herb mixture over both sides of steak. Let stand 5 minutes.

Place steak on gas grill over medium heat or on charcoal grill 4 – 6 inches from medium coals. Grill 10 to 14 minutes for medium-rare or until desired doneness, turning once. Cover loosely with foil; let stand 10 minutes. Cut into 1/2-inch-thick slices.
