Grilled Cheese & Asparagus Sandwiches

Serves 2

 

4 slices Smoked Gruyere cheese

4 slices whole wheat bread

8 – 10 stalks steamed asparagus

Margarine or butter, softened

 

 

Toast bread, if desired.

Place 1 slice cheese on each slice of bread. Place 4 – 5 stalks of cooked/cooled asparagus on 2 of the bread/cheese slices; cover with remaining slices of bread/cheese.

Spread margarine or butter over top slices of bread.

 

Place sandwiches, margarine or butter side down, in skillet. Spread margarine or butter or top slice of bread. Cook uncovered over medium heat about 5 minutes or until bottoms are golden brown. Flip and cook and additional 2-3 minutes, until cheese is melted. Slice diagonally.

 

Serve warm with chili or other flavorful soup!
