Kielbasa-Bean Slow Cooker Soup

Serves 4-6

 

2 cans fat-free chicken broth, 14.5 Oz. cans

8 ounces reduced fat Kielbasa

1 can pinto beans, rinsed and drained

1 can black beans, rinsed and drained

2 medium carrots, chopped

2 medium celery stalks, chopped

1 small onion, chopped

1 teaspoon thyme

1 can diced tomatoes, undrained

 

Mix all ingredients, except tomatoes, in a slow cooker. Cover and cook on low-heat setting at least 6 hours or until beans are tender.

 

Stir in tomatoes, cover and cook on high-heat setting until heated through, about 15 minutes more.

 

 

Great served with a blue cheese and pear salad. Add a slice of rosemary and olive oil bread and you’ve got a complete dinner!
