Lo-Cal Carrot Orange Ginger Salad Dressing
Carrots, orange juice and ginger -- together at last!

Makes six 2-tablespoon servings.

 


1 cup freshly grated carrot
1/2 cup orange juice
2 tablespoons pickled ginger; roughly chopped (also called sushi ginger; found in the Asian section of the supermarket)
Salt and pepper; to taste

Place carrot and ginger in a blender, and cover with orange juice. Blend at slow speed until mixture is pureed. Increase blender speed until dressing is smooth. Season it up, and serve it up!
