Lo-Cal Onion
Rings
Serves 1 [15 rings]
1 large onion
1/4 cup Egg Beaters
1/2 cup breadcrumbs
Preheat oven to 375° F.
Cut ends off onion and remove outer layer. Cut onion into ˝ inch wide slices and separate into rings.
Put Egg Beaters in small bowl (large enough to hold rings) and put breadcrumbs in small plastic bag.
One by one, coat each ring in egg, insert in breadcrumb bag and shake to cover. Remove ring from crumbs and place on an oven-safe baking dish sprayed with nonstick spray.
Bake for 30 minutes, flipping rings over about halfway through.
