Ma Ma’s Rhubarb Pie

Serves 8

 

4 Cups Rhubarb, ½ to 1” pieces

¼ Cup Tapioca

1 Cup Sugar, Divided

2 Eggs

1 Pie Crust

 

Mix rhubarb, tapioca, ½ cup sugar in bowl. Let stand for 15 minutes.

 

Line 9-inch pie plate with pie crust. Fill with rhubarb mixture.

 

Beat 2 eggs and ½ cup sugar together and pour over rhubarb mixture.

 

Bake in preheated oven at 400 degrees for 45-50 minutes or until juices form bubbles that burst slowly.

 

Cool.

 

Note: More, or less, sugar may be used depending upon taste.
