Mama's Smothered Chicken

1 medium fryer, cut into serving pieces
½ stick butter
¼ cup flour
Juice of ½ lemon
2 tablespoons Worcestershire sauce
1½ cups water
2 cups buttermilk to marinade in.
Big Jim's Secret [No longer] Seasoning (See Misc. Recipes)
Salt and pepper to taste
Season chicken well with salt and pepper. Marinate it in buttermilk
for 2 hours in the refrigerator. Remove from marinade and sprinkle on some Big
Jim's Secret [No longer] Seasoning. Discard marinade.
Preheat oven to 500° F.
Place chicken in a 9-13-inch baking dish and dot it with butter. Then sprinkle
about a fourth cup of flour over it.
Turn oven down to 350° F.
Bake chicken until it begins to brown. Then, lemon juice, Worcestershire sauce
and a cup and one
half of water.
Cover tightly in foil and bake it another hour and a half or
so, basting it occasionally.
Folks, serve this chicken to your hungry bunch and you'll see. The chicken will
literally fall off the bones and disappear right before your eyes. (The chicken, not the people.)
