Manly Quiche
Serves 5-6
1 9” pie crust [frozen is fine]
6 slices Canadian Bacon, chopped [or regular crisp bacon)
1 ½ cups shredded Gruyere and Swiss cheese
[About 1 cup Gruyere and ½ cup Swiss]
4 large eggs
1 ½ cups evaporated milk or heavy cream
½ teaspoon salt
1/8 teaspoon ground nutmeg
Press pie crust into a 9-inch pie pan or quiche dish. Place a piece of aluminum foil inside pie shell, partially fill with uncooked beans or rice [weights]. Bake at 450 degrees for 10 minutes.
Lift off foil and weights; return to oven for 5 minutes or until lightly browned.
Let cool. Reduce oven temperature to 350 degrees.
Spread bacon in crust; sprinkle evenly with cheese/s.
In a medium bowl, beat eggs with cream, salt, and nutmeg; pour over cheese.
Bake until center is set when pan is shaken slightly (40 minutes).
Let rest for 10 minutes before serving.
