Marinara Sauce

 

Serves : 4-5

 

1 tablespoon olive oil

½ large onion, finely chopped

½ large carrot, finely chopped

1 clove garlic, minced

1 can (14.5 Ounce) tomatoes, petite diced

1 can (8 Ounce) tomato sauce

1/8 cup dry red wine

Salt, to taste

½ teaspoon pepper

½ teaspoon dried basil

½ teaspoon dried oregano

½ teaspoon sugar

1 bay leaf

 

Heat oil in small skillet over medium heat. Add onion, carrot, and garlic; cook until vegetables are tender (8-9 minutes).

 

Add tomatoes with their liquid, tomato sauce, wine, pepper, basil, oregano, sugar, and bay leaf.

 

Reduce heat; cover and simmer until richly flavored (about 45 minutes). Remove bay leaf. Salt to taste.

 

Ladle sauce over individual pasta serving and sprinkle with Parmesan cheese.
