Mike’s Mustard Lemon Tilefish

Mike ‘El Presidente’ Ward, Corolla, NC

Tilefish is a ‘wreck’ fish caught in the Atlantic 30 miles or so off-shore. It has the consistency of a Monk fish and tastes a bit like mock lobster. Yum!

Serves 2

2 Tilefish fillets, 6-8 oz.

¼ teaspoon lemon zest

¼ cup lemon juice

¼ cup vegetable oil

2 teaspoons Dijon mustard

1 tablespoon parsley, chopped

Salt and pepper to taste

Combine zest, lemon juice, oil, mustard, parsley, salt and pepper.

Sprinkle both sides of fillets with mustard/lemon mixture and place on broiler pan. Reserve mixture.

Broil, approximately 4 inches from heating element, for about 8 minutes. Turn and baste both sides of fillets with mixture after 4 minutes.

Place fillets on serving platter and drizzle mustard/lemon mixture over before serving.
