Makes 4 Servings
4 cups green beans, French cut
¼ medium onion, sliced
1 clove garlic, diced
¼ cup
¼ cup peanuts, salted/chopped
½ lemon
Non-Stick spray
Salt and pepper to taste.
Spray frying pan with non-stick spray. Add onion and garlic to pan. Heat until onions are just transparent, not browned.
Add green beans and ham. Cover and simmer for 30-35 minutes on medium heat. Stir once or twice. Beans should be slightly crunchy.
Turn into a glass bowl. Sprinkle with lemon juice, stirring thoroughly.
Salt and pepper to taste. Garnish with chopped peanuts.
Serve while hot.
