Outer Banks Style Rockfish
Otherwise known as Striped
Bass to those of the Northern persuasion…
2 pounds rockfish, fillet [or any firm white fish]
6 pieces of bacon, apple wood or brown sugar
1 head of cauliflower, chopped
1 tablespoon of olive oil
1 leek, julienned
Grape tomatoes, chopped
Sauce:
¾ stick of butter
½ cup heavy cream
¼ cup apple cider vinegar
Pre-heat oven to 400° F.
Toss the cauliflower with a little olive oil, salt and pepper. Lay flat on cookie sheet. Roast in oven for 25 minutes.
On another cookie sheet, place rockfish skin side down. Bake for 25 minutes or until flaky, white.
Cut uncooked bacon into 1 inch pieces. Cook on medium high heat until crispy. Remove and drain.
Sauce:
On low heat, bring cream to just under simmer. Add butter. Once butter is melted completely, add cider vinegar. Reduce on low heat. You may add a little flour to thicken.
To serve:
Place a small amount of sauce on plate. Top with cauliflower. Top cauliflower with half of the bacon, then the fish. Top fish with remaining bacon, leeks and tomato. Salt and pepper to taste.
