PEANUT BUTTER BALLS
Makes: 40-50 balls [depending upon size]
1 1/2 cups smooth
peanut butter
1/2 cup butter [melted]
1 pound box powdered sugar
3 cups Rice Krispies
13 ounce semi-sweet chocolate bar
Mix peanut
butter, butter and sugar. Blend until smooth. Add Rice Krispies.
Refrigerate for 1 hour. Coat hands with butter and form mixture into small
balls. Freeze (overnight if possible).
Melt chocolate in
double boiler or microwave. Remove balls from freezer. Dip 1/2 of each ball
into melted chocolate [using a toothpick as a ‘handle’] and set on waxed paper or
parchment paper until cool.
