Pheasant in a Bag

 

Serves 2

 

1 pheasant

Salt and pepper

Butter, 1 stick

4 cloves garlic, minced

1 onion, chopped

 

Preheat oven to 350 degrees F.

 

Salt and pepper pheasant inside and out. Rub butter on outside of pheasant. Combine garlic, onion and remaining butter and insert in cavity of bird. Put pheasant in a brown paper bag and tie the end closed.

 

Set bag on cookie sheet and bake for 1 ½ hours.

 

Serve with wild rice and steamed vegetables.
