Pork and Pineapple Casserole
Use lean boneless pork chops
and low-fat bacon…
Serves 2-3
1 8-0z. can crushed pineapple, drained [reserve some liquid]
2 – 3 pork loin chops
Salt and pepper to taste
1 – 2 potatoes, sliced
3 – 4 slices bacon or Canadian bacon
Line casserole dish with crushed pineapple. Cover with pork chops and season with salt and pepper. Cover with slices of potato and then slices of bacon.
Cover with lid and bake for 1 hour at 350º F.
Check dish a few times while baking. If casserole begins to dry out add some of the reserved pineapple liquid.
