Portobello Pizza

Serves   2  (as a main course)

 

2 portobello mushroom caps

Olive oil spray

2 ¼”- thick slices part-skim mozzarella

1 ripe tomato, sliced thinly

½ tablespoon dried basil

1 tablespoon pine nuts (optional)

 

Preheat oven to 350 degrees  F.

 

Spray mushroom caps lightly with oil spray. Put mushroom caps on baking sheet; bake for 8-10 minutes. Remove from oven.

 

Top each mushroom cap with cheese, tomato slices, basil and pine nuts. Return to oven and bake for an added 5 minutes.

 

Serve hot.
