Prickly Pear Lemonade

Sunset Recipe Annual, 1998 Edition

 

Makes 2 cups, 2 or 3 servings

 

 

2 prickly pear fruit (about 10 oz. total)

½ cup lemon juice

2 tablespoons sugar

Ice cubes

Lemon slices, for garnish

 

 

Cut ends from prickly pears. Cut a lengthwise slit through peel on each fruit. Pull back peel, scoop out fruit, and discard peel.

 

Put prickly pear pulp, lemon juice, sugar, and 1 cup water in a blender or food processor. Whirl until smooth.

 

Pour into ice-filled glasses.
