Prime Rib au Poivre

1 4-6 pound boneless beef rib roast
2 tablespoons Dijon-style mustard
2 tablespoons garlic, minced
2 tablespoons peppercorn mélange, coarsely cracked
Trim excess fat from top of beef, leaving a layer of fat about ¼” thick. In a small bowl combine mustard and garlic; spread over top of beef. Sprinkle cracked peppercorns over mustard mixture.
Place meat, mustard up, in a foil-lined 15 ½ X 10 ½ X 2-inch roasting pan. For best results, insert an oven-safe meat thermometer into center of meat. Roast in a 350oF oven until thermometer registers 1350F for medium rare (1 ¾ to 2 ¼ hours) or 150oF for medium (2 ¼ to 2 ¾ hours). Cover with foil. Let stand for 15 minutes before carving.
