Quick, Easy Dill-y Beef Stroganoff

This recipe is quick and easy to prepare. You can use fresh or dried dill. Either way, it is delicious.

Brown in large skillet:

1 pound lean ground beef

While ground beef is browning, combine the following ingredients in a medium bowl, mixing with a fork:

3 teaspoons low-salt beef stock powder (like Oxo/Knorr)
1/4 cup flour
1 teaspoon paprika
(2 teaspoons paprika will add an extra "bite" to the flavor)
1 teaspoon dried dill OR 1 Tablespoon fresh dill

Into the dry ingredients, slowly add the following, stirring well to prevent lumps:

2 cups low-fat or skim milk

Mix until well blended. Add to ground beef when it is browned and stir until the stroganoff thickens. Cook for two minutes, then remove from heat and stir in:

1 cup low-fat or no-fat yogurt

Serve with pasta or mashed potatoes.
