Ritz Cracker Pie
Serves about 6
20 Ritz crackers
1 cup finely chopped pecans
3 egg whites
1 cup sugar
1 teaspoon baking powder
1 teaspoon vanilla
Roll crackers into crumbs. Mix with pecans and set aside.
Beat egg whites until almost stiff. Add sugar, baking powder, and vanilla to egg whites. Add cracker crumbs and nut mixture to egg whites; mix together well.
Pour mixture into a greased pie pan. Bake at 350 degrees for 25 minutes. [Pie will crack in middle when done.]
Let cool. Serve with ice cream.
