SHOOFLY CUPCAKES

Makes 2 dozen

 

 

4 cups all-purpose four

¼ teaspoon salt

2 teaspoons baking soda

1 cup molasses

2 cups brown sugar, packed

1 cup butter, cold

2 cups water, boiling

 

 

In a large bowl, combine flour, brown sugar and salt. Cut in butter until crumbly. Set aside 1 cup of mixture for topping. Add baking soda to remaining crumb mixture. Stir in water and molasses. Fill paper-lined muffin cups two-thirds full. Sprinkle with remaining crumb mixture.

 

Bake at 350º for 20-25 minutes or until a toothpick inserted in middle of muffin comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool.
