Salt Cracker Pie

 

Makes 1 9-inch pie

 

3 egg whites

1 cup sugar

1 teaspoon vanilla

1 cup pecans, chopped

24 individual saltines

 

Topping

 

1 cup whipped topping

2/3 cup coconut

 

Beat egg whites until foamy. Gradually add sugar and vanilla.

 

Roll crackers until you have fine meal. Fold crackers and chopped pecans into egg white mixture.

 

Pour into a buttered 9-inch pie plate and bake at 350 degrees F for 30 minutes. Remove from oven and cool.

 

Spread whipped topping on pie and sprinkle with coconut.
