Shrimps are supposed to be labeled and, generally speaking, the larger the number the smaller the shrimp per pound… Here’s a guide to sizes and average counts per pound:

Jumbo                11 - 15                 Grill, poach, roast, butterfly/stuff

 

Extra Large       16 - 20                 Scampi, grill, boil/peel & eat, sauté

 

Large                  21 - 30                 Best value for peeling & all cooking

 

Medium              31 - 35                 Gumbo, curry, cocktail, stir-fry, etc.

 

Small                   36 - 45                 Salad, stir-fry, taco, spring roll, etc.

 

Miniature           ~ 100                   Salad, appetizer
