Southern Pecan Pie

 

3 eggs, beaten

1 cup dark corn syrup

1 cup sugar

1/2 cup butter, melted

1 teaspoon vanilla

2 - 2 1/2 cups pecans

1 9-inch unbaked pie shell

 

Preheat oven to 350° F.

 

In large bowl, mix together the eggs, syrup, butter and vanilla until well blended. Stir in pecans. Pour into pie shell and bake for 50-60 minutes or until knife inserted halfway between center and edge comes out clean.

Cool. Serve at room temperature with whipped cream.
