Strawberry Scallops

 

4 tablespoons butter

1 tablespoon lemon juice

1 pound fresh sea scallops

1/4 cup champagne or sparkling fruit juice

1 tablespoon chopped fresh parsley or parsley flakes

1 pint fresh strawberries, sliced

 

Melt butter in a large saucepan over medium-high heat. Add lemon juice and scallops and sauté until browned lightly on both sides but do not overcook. Add champagne or juice and parsley. Stir to combine. Add strawberries, gently stir.

 

Reduce heat and simmer 5 minutes, then serve.

 

Delicious with fresh salad.
