Sugar Free Cherry Pie

1 package (3 oz size) sugar-free cook and serve vanilla
pudding
1 package (3 oz size) sugar-free cherry Jell-O
2 (16 oz. size) cans red tart cherries
1/2 teaspoon almond extract
12 packets Splenda (added after removing saucepan from stove burner)
Prepared 9" pie crust, optional
Drain
the cherries; save the juice and add enough water to make 2 cups of liquid.
Mix the dry pudding, dry Jell-O, 2 cups of liquid mix and almond extract in a
medium saucepan. Bring to a rolling boil, stirring constantly. Remove from the
heat and add the cherries and Splenda. Pour into
prepared pie shell or bowl. Let cool before serving.
This will make filling for one 9-inch pie or can be used just as a pudding. Top
with Cool Whip if desired.
