Sweet Potato Biscuits

Makes 1 dozen biscuits

 

 

1 cup mashed, cooked sweet potatoes

2/3 cup milk

¼ cup melted margarine

1 ½ cups unsifted all-purpose flour

2 Tablespoons sugar

1 Tablespoon baking powder

 

 

In bowl, blend together potatoes, milk and margarine.

Sift together flour, sugar and baking powder and stir into potato mixture to make a soft dough.

Turn out onto well floured surface and knead lightly until dough is smooth. Roll out to ½ inch thickness and cut with floured biscuit cutter. Arrange on greased baking sheet.

Bake at 450 degrees F about 15 minutes or until golden brown.
