Sweet and Savory French Toast

 

Serves: 6

 

6 ounce package maple breakfast sausages, casings removed

3 eggs

1/3 cup half and half

1/8 cup maple syrup

4 slices bread

6 slices sharp cheddar cheese

 

Coat a small casserole dish with cooking spray.

 

Over medium-high heat, sauté crumbled sausage until lightly browned, about 5 – 7 minutes. Drain and set aside.

 

Whisk together eggs, half and half, and maple syrup.

 

Fit two slices of bread into bottom of dish, trimming bread as necessary. Spread sausage over bread and top with 3 slices of cheese in a single layer. Place remaining bread over cheese and top with remaining cheese. Pour egg mixture over top. [Can cover and refrigerate overnight at this point.]

 

Bake at 375° F for 30 minutes or until golden brown and eggs have set.

 

Serve warm.
