Tomato Pie

A very tolerant recipe… Improvise at will. 

 

Serves 4

 

4-5 tomatoes, sliced [peeled, if desired]

8-10 basil leaves [or, 1 teaspoon Italian Seasoning Mix]

˝ cup green onions, chopped

1-9” pie crust, pre-baked

Salt & pepper to taste

2 cups mozzarella and cheddar cheese, grated together

1 cup light mayonnaise

 

 

Preheat oven to 350° F.

 

Layer tomato slices, onions and basil in pie shell. Add salt and pepper to taste. Mix together grated cheese and mayonnaise. Pour on top of tomato/onion mixture.

 

Bake 30 minutes or until lightly browned.
